Ingredients:

  • 8 taco-sized artisan tortillas

For the Chicken:

  • 1 pound boneless, skinless chicken tenders
  • 1/2 Cup Bella Sun Luci Julienne Cut Sun Dried tomatoes in Olive Oil with Italian Herbs
  • 1 lemon (juiced and zested)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

For the Crema:

  • 1 1/2 Cups plain Greek yogurt
  • 1/3 Cup Bella Sun Luci Julienne Cut Sun Dried Tomatoes in Olive Oil with Italian Herbs
  • 1 Tablespoon lemon juice
  • 1 Tablespoon honey
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt

For the toppings:

  • 1/3 Cup Bella Sun Luci Julienne Cut Sun Dried Tomatoes in Olive Oil with Italian Herbs
  • 2 small cucumbers, peeled and diced
  • 1 small red onion, diced
  • 1/2 Cup Feta cheese, crumbled
  • 2 Tablespoons red wine vinegar
  • 1/4 cup fresh basil, chopped
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt

Directions

Prepare the marinade for the chicken. In a food processor, combine the 1/2 cup of sundried tomatoes, the lemon juice, salt, and pepper. Puree. Add the chicken to a gallon-sized zip top bag and add the marinade. Seal the bag and move the chicken around gently with your hands to coat. Refrigerate while you prepare the crema and toppings.

Make the crema by adding the yogurt, sundried tomatoes, lemon juice, honey, salt, and pepper to a blender or food processor. Pulse just until combined. Refrigerate until ready for use.

To make the taco toppings, combine all topping ingredients in a large bowl and stir to combine. Refrigerate until ready to serve.

Heat a well-oiled grill pan to medium high. Remove the chicken from the marinade and grill for 4 to 5 minutes per side, just until cooked through. Chop the tenders into strips.

To assemble the tacos, warm the tortillas. Place 1/8 of the chicken into each tortilla. Top with 1/8 of the toppings and the crema. Serve warm.

How did you feel when you found out you won the contest?

I was absolutely honored to find out I won the Bella Sun Luci Contest. I know there must have been so many great recipes that were entered, to have mine picked is really a dream come true and I'm extremely thankful.

How did you come up with the idea for the winning recipe?

I love to make tacos for my family because I always know they'll be a hit. I wanted to develop a taco recipe that was created around the robust, fresh flavor of Bella Sun Luci Sun Dried Tomatoes and this was the result. I think they taste like summer.

How long have you been using Bella Sun Luci products? And what is your favorite?

I've been using Bella Sun Luci Products for many years in my cooking because they add something a little bit unexpected to a dish. I used my favorite product, the Bella Sun Luci Julienne Cut Sun Dried tomatoes in Olive Oil with Italian Herbs, in this recipe. I love the way these add richness and extra flavor to my recipes.

Where do you shop for Bella Sun Luci products?

I always pick up a jar when I do my weekly shopping at Target.

Other hobbies, passions, pastimes?

When I'm not in the kitchen cooking, I can typically be found enjoying the great outdoors with my husband Chad and my two boys, Mason (14), and Luke (9). We love to camp, spend time at the lake, hike, and picnic in the gorgeous Utah landscape we love so much. I can never get enough of it.

Any other comments you would like to add that relate to your passion for cooking?

I began cooking about 17 years ago when I got married because it was a way to bring family and friends together. Since then, I've hosted more big dinners at my house than I could ever count and I've thoroughly enjoyed each one. I feel that good food that you spend your time and energy to make is one of the most powerful ways to communicate just how much you care for people.
