“Super Sunday” Menu Planning with Mooney Farms

If you are planning to invite friends and family over to watch the big game on Sunday, you might be trying to figure out a menu for your guests. We have some ideas that are both easy and delicious so you won’t be in the kitchen the whole afternoon!

Sun Dried Tomato Hummus


2-15 oz. cans chickpeas/garbanzo beans, drained and rinsed

1-8.5 ounce jar Bella Sun Luci Halves or Julienne Cut Sun Dried Tomatoes in Olive Oil & Herbs

½ cup extra virgin olive oil

½ lemon juiced

2 cloves garlic, peeled

1 ½ tsp salt

12 to 15 grinds black pepper

¼ cup water

6 fresh basil leaves

Chopped olives, for garnish

In a blender combine first eight ingredients. Blend on low speed until smooth. If the mixture is too dry, add a few more tablespoons of olive oil to help blend. Spoon the hummus into a serving dish. Garnish with sliced olives and fresh basil leaves. Serve with pieces of pita bread, chopped veggies, or crackers.


Italian Layered Dip


8 Oz Cream Cheese

6 Oz Goat Cheese

1 Cloves Fresh Garlic, Minced

6 Oz Pesto (Green Or Red)

8.5 Oz. jar Bella Sun Luci Sun Dried Tomatoes, chopped

¼ Cup Pine Nuts

Let cream cheese and goat cheese soften to room temperature.  Mix cheeses together with minced garlic.  Line a small casserole dish with plastic wrap.  Put 1/3 of cheese mixture in the dish, spreading it evenly to the sides.  Next, layer ingredients in the following order: sun dried tomatoes, 1/3 cheese mixture, green or red pesto, and remaining cheese in the same manner.  Cover with plastic wrap and chill for 1 hour.  Turn upside down onto a platter, sprinkle with pine nuts (if desired) and serve with crackers.
