It’s National Egg Month! - Featuring our Bella Sun Luci Mediterranean Quiche
When is National Egg Month? Observed the whole month of May, National Egg Month is a reminder to everyone about the many benefits of the egg. Did you know that more eggs are sold in America during the Easter season – usually in April than at any other time of the year? Then, sales go down, but the hens keep on laying eggs. Starting in May and running through the summer, eggs are usually an even better bargain than they are the rest of the year.
The American Egg Board and the American egg industry celebrates National Egg Month in May to remind home cooks how good eggs are. Egg farmers want cooks to remember that eggs are nutritious to eat and simple to make in many different ways.
Here’s a recipe that we especially love because it includes our BELLA SUN LUCI Sun Dried Tomato Products! Try it on your next weekend off or for your next family brunch!
Bella Sun Luci Mediterranean Quiche
½ cup Bella Sun Luci Sun Dried Tomato Pesto
1 (9 inch) unbaked pie crust
1 cup sliced yellow onions
1 medium zucchini, chopped, or thinly sliced
1/4 pound mushrooms, wiped clean and sliced
4 tbsp. crumbled goat cheese
½ cup half and half cream
2 Tbsp butter
1 tbsp. all purpose flour
8 BELLA SUN LUCI Sun Dried Tomatoes in olive oil, drained and cut into strips
Preheat oven to 375° F. In a large skillet melt the butter over medium-high heat. Add the onions and zucchini and cook, stirring, for 5 minutes. Add the mushrooms, continue stirring, and cook another 10 minutes.
Spread pesto evenly in the bottom of the pie crust. On top of pesto spoon pieces of Sun Dried Tomatoes, and cooked vegetables in an even layer. Sprinkle goat cheese on top of vegetables. In a large bowl, beat together eggs, half and half cream, and flour. Pour over goat cheese in pie crust. Bake for 35 to 40 minutes until set. Remove from the oven and let cool for 30 minutes before serving. Serves 4-6.
